This first phase of rebuilding has been the hardest so far. We had to adapt physically, face the freezing winter, and learn many new skills from scratch. Yesterday we found out that as a non-profit we can’t use the 10% VAT rate. And we can’t reclaim the 21% either. That’s €20.000 extra. And honestly — we don’t yet know how to solve it. We prepared carefully. Spoke to the accountant. Checked the numbers. Budgeted with precision. There was no room for surprises. We’re working with a tight budget, doing as much as we can ourselves. After waiting almost a year to get all the documents in order, we finally started the renovation. We broke down lots and lots of walls and even a ceiling, discovering the natural materials used to build this amazing structure. Such an inspiration! We finally managed to finish last summer’s update video! It was a season full of harvesting and processing fresh food straight from the garden — drying fruits and veggies, making juices to enjoy all year round, cooking up lots of marmalades, and even trying a little fermentation experiment.
